Attack by far is my favourite version of Deoxys, then it's a close tie between the regular and speed ones because I'm indecisive lol. I have a feeling the Celebi quests are gonna be similar to the Mew ones, so make sure you save candies to evolve something stupid like Wailmer/Swablu lol. As for the raids, were you only able to hit 8 and 7 for Articuno and Zapdos respectively in the 3 hours? Or were there not enough gyms for you to hit more? And same, I don't like Moltres at all so I'm not sure I'll have motivation for it. I'll probably just use my free raid passes on it and if I don't get it, I don't get it. :p I saw a bunch of threads on Reddit for both birds where people did about 20-25 for each one and still didn't get the shiny variants. D: I wish they upped the chances of encountering a shiny.
